Bowls are truly the best. No need to worry about sides, and so much opportunity to pack in flavor. I mean, these Turkey and Cauliflower Hummus Bowls With Charred Romaine really do have all the spices, textures, and herbs. There’s nothing better.
Shawarma style meat was my inspiration for this recipe. For those of you who don’t know, Shawarma is thinly sliced Levantine Arab meat that is seasoned with all the good Middle Eastern spices and traditionally prepared as stacks of meat rotating on a vertical stick. Being that I, and I’m guessing most of you, don’t have the time, equipment, or generations of grandparents with sacred Shawarma recipes at your disposal, I opted to not make these Turkey and Cauliflower Hummus Bowls With Charred Romaine a traditional Shawarma dish.
Now, that isn’t to say you can’t make a pseudo-Shawarma chicken, lamb, or beef with the spices. But, it probably won’t be the same as the real deal. I save that for the professionals (tbh, dive type of restaurants usually do this best). So, I took the first part of Shawarma, the spices, and turned a simple ground turkey into the perfect Larb for your bowls. With all those good spices, some chicken broth, a lemon, and some melty salty feta, the ground turkey mixture really is one of the best things I’ve ever eaten.
The breakdown…
The ground turkey and cauliflower are really very simple. Especially if you follow my note and steam frozen cauliflower in the microwave — so much easier and quicker! After getting a little brown on your turkey, you want to toss in your cauliflower as soon as possible. This is so you can get as much of a char as possible onto your florets. With that cauliflower, I add all the Shawarma seasonings. It may seem like a lot, but the flavors that come out of this spice blend are truly worth it. Better yet? When you add in that lemon juice and chicken broth, you create a subtle sauce-like that really enhances the seasonings. So good!!
Lastly, you have to throw that feta in with the meat! I originally thought that I would just add the feta on top, as one would in a traditional bowl. But, in these Turkey and Cauliflower Hummus Bowls With Charred Romaine, I quickly realized that when the feta slightly melts and mixes in with all the spices… it’s truly magical.

After that quick bit of cooking on the stove, all there’s left to do is assemble your bowls! I start off my bowls with couscous because, if you can’t tell from my recipes, it’s my absolute favorite grain. That being said, you can substitute it for any grain you want — or even a green if you are taking a lighter approach.
Then, I add on my persian cucumbers, cherry tomatoes, fresh basil, and pickled onions. As with most bowls, you can really mix and match your toppings depending on your preference. My other go-to add-ons would be kalamata olives, regular red onion, roasted or raw chickpeas, mint, or dill. The sky’s the limit!

Lastly, let’s talk about hummus. I love to serve these bowls with my favorite Perfect Pita Original Hummus (check out their storefronts, too… their gyros are INSANE), but you can go with any hummus you love. Flavored or not, it will be delicious. You could also add to or replace the hummus with a different dip, like Tzatziki or Baba Ganoush (my fav!!). However you serve these up, don’t forget the dip! It’s crucial!
These Turkey and Cauliflower Hummus Bowls With Charred Romaine are truly the easiest weeknight dinner to throw together, and will honestly please the whole family. Turkey and Cauliflower Hummus Bowls With Charred Romaine

Ingredients
- stovetop:
3 tbsp olive oil, divided
1 head romaine, sliced in half lengthwise
1 lemon, juiced
1 lb ground turkey
1 head cauliflower, cut into florets and steamed*
3 cloves garlic, minced
1 ½ tsp ground cumin
1 ½ tsp smoked paprika
½ tsp ground cinnamon
¾ tsp turmeric
1 tsp dried oregano
Salt and pepper, to taste
Red pepper flakes, to taste
½ cup chicken broth
½ cup feta cheese, cubed or crumbled
1 large lemon, juiced
- assembly:
2 cups couscous, prepared according to package
2 persian cucumbers, thinly sliced
½ pint cherry tomatoes, halved
¼ cup fresh basil, sliced
¼ cup pickled onions
½-1 cup hummus
Instructions
- In a large skillet, heat 2 tbsp olive oil over high heat. Once hot, add the two romaine halves, middle side down. Allow the romaine to char, about 1-2 minutes, then flip and allow to char on their backsides for another 1-2 minutes. Remove from the skillet and thinly slice for topping the bowls later. Squeeze the lemon and a pinch of salt on the romaine.
- While the skillet is still hot, add the remaining tbsp of olive oil. Toss in the ground turkey and break up with a spoon. Once it begins to brown, toss in the steamed cauliflower and all of the spices. Mix to combine and allow to cook for about 5 minutes, or until the turkey is cooked through and the cauliflower has charred. Stir in the chicken broth, lemon juice, and feta cheese and reduce the heat to medium. Allow to simmer for about 10 minutes, or until a sauce forms and the feta has melted.
- To assemble your bowl: top couscous with the cauliflower and turkey mixture, making sure to include lots of the juices! Then, top with some cucumber, feta, cherry tomatoes, basil, pickled onions, and a dollop of hummus. Enjoy!
Notes
- I like to buy bags of frozen cauliflower florets and steam them in the microwave. So easy and quick!
