Salmon has my heart. I kid you not I could eat it everyday of the week… there’s just so much you can do with it! This Crispy Baked Salmon with Pistachio Basil Pesto, Lentils, and Cauliflower recipe is the perfect example. With a bed of baked lentils and quinoa, roasted veggies, some arugula, and of course tons of pesto, this dish is totally different than your average salmon dish. You have to give this a try!

The breakdown…

It’s always nice when you can just stick to one method of cooking when it comes to a simple dinner, as opposed to heating up every appliance in your kitchen. This recipe uses the oven to cook the lentils, roast the cauliflower, and bake the salmon. Super easy! 

This Crispy Baked Salmon with Pistachio Basil Pesto, Lentils, and Cauliflower all starts off by cooking the base of lentils and quinoa. In my opinion, lentils are totally underrated! With tons of health benefits and a super easy preparation, they are truly the best base for a bowl — especially when you’re tired of your average grains. In this recipe, I like to mix it up with some red quinoa too. This combo allows for a perfect balance of textures, but also brings in a ton of flavor.

As opposed to your typical stove top preparation, the quinoa and lentils are mixed up with some chicken broth (so much better than water in your grains!) and thrown into the oven. As noted above, I think it’s just so much easier to keep everything in the same place! Plus, this allows for an easy base for the salmon to be baked on top of. 

Speaking of that salmon….

This salmon is honestly so simple, yet really perfect for this dish. I simply coat it in some salt and a generous amount of garlic powder and throw it on top of my lentils and quinoa. With a ton of garlic powder and the oven at a high heat, the salmon is able to achieve a super nice crisp. Oh, and that garlic flavor is to-die-for on salmon!

Once your lentils and quinoa are about halfway done, it’s time to throw in your cauliflower florets. With some more salt and garlic powder, this simple roasted cauliflower is my favorite. I love getting my cauliflower super crispy as it makes for the best texture on your Crispy Baked Salmon with Pistachio Basil Pesto, Lentils, and Cauliflower bowls! Still, if cauliflower isn’t your thing, you could totally use whatever vegetables you love. I’ve done this with roasted asparagus and it was delicious. But, broccoli, eggplant, or sweet potatoes would be delicious on this!

With whatever veggies you choose to go with, it will be delicious! Especially with that pistachio basil pesto! This is one of my go-to pestos (and I make pesto a lot!!). Pesto is essentially a combo of fresh herbs/greens, olive oil, and a nut or seed. This pesto has all those basics (basil, pistachios, etc) plus tons of other amazing add-ins. Parmesan cheese adds a nice bite and tons of creaminess, while lemons bring in a little bright flavor! Then, with some salt, pepper, and garlic, voila! You have yourself a perfect, easy pesto!

With that perfectly baked salmon, lentils, and quinoa, that roasted cauliflower, a hint of freshness from that arugula, and a mouthwatering pistachio basil pesto, this Crispy Baked Salmon with Pistachio Basil Pesto, Lentils, and Cauliflower is truly the best! Being a bowls style meal, it’s super easy to whip up for your average weeknight dinner. This bowl really does please the whole fam. I mean, who doesn’t love pesto?! It’s the best, and so are these bowls. You have to try them!

Crispy Baked Salmon with Pistachio Basil Pesto, Lentils, and Cauliflower

Ingredients

  • 1 cup lentils

  • 1 cup red quinoa

  • 4 cups chicken broth

  • 2 tbsp olive oil

  • 1 head cauliflower, cut into florets

  • Salt and garlic powder, to taste

  • 2lb salmon, filleted

  • Baby arugula, to garnish

  • pistachio basil pesto:
  • 2 cups fresh basil

  • ¼ cup olive oil

  • ½ cup water

  • 1 lemon, juiced

  • ⅓ cup pistachios, shelled

  • ¼ cup parmesan cheese, grated

  • 2 cloves garlic, smashed

  • Salt and pepper, to taste

Instructions

  • Preheat the oven to 450 degrees.
  • In a 9×13 inch baking dish, whisk the lentils, red quinoa, and chicken broth until combined. Transfer to the oven and bake for 25 minutes.
  • On a large baking sheet, toss the cauliflower florets with the olive oil, salt, and garlic powder. Transfer the cauliflower to the oven, just below the lentils and quinoa. Set the timer for an additional 20 minutes and continue to roast everything together.
  • Meanwhile, to make the pesto, combine all ingredients in a food processor or blender and blend until smooth. Season with salt and pepper to taste.
  • Temporarily remove the baking dish from the oven, and fluff the quinoa and lentils with a fork. Place the salmon directly on top of the fluffed grains, and season it with a pinch of salt, a generous amount of garlic powder, and a drizzle of olive oil. Return the dish to the oven and bake for a final 10 minutes, or until the salmon is cooked through. Then, remove both the baking dish and the sheet pan of cauliflower from the oven.
  • To assemble your bowl, start with a base of the lentils and quinoa. Add some of the roasted cauliflower, a handful of the arugula, and a fillet of salmon. Drizzle with tons of that homemade pesto. Enjoy!

Notes

  • You can substitute cauliflower for any vegetable of choice. Asparagus, broccoli, eggplant, or sweet potatoes would be delicious!
