Cod gets such a bad rap, if you ask me. Sure, it may not be the most flavorful fish, and, yeah, it’s definitely not the most luxurious. Still, it’s one of the flakiest and easiest fishes to prepare, and it’s super affordable wild-caught at just about any grocery store. Sounds like a winner to me! The best way to use cod? Well, in my opinion, cod is all about that flaky texture… not so much the flavor. So, I always opt to serve it up with a pungent sauce, loaded up in a taco or tostada, or, in this case, pesto! In particular, this recipe calls for a sun-dried tomato pesto — one of the most strong flavors out there. And, let me just tell you, if you’re a sun-dried tomato fan like me, you’re going to be obsessed with this Crispy Sun-Dried Tomato Cod Over Lemony Couscous. It’s truly the fish recipe of my dreams!

This Crispy Sun-Dried Tomato Cod Over Lemony Couscous is a super classy, well-rounded dinner, yet it comes together in the blink of an eye — trust me. For starters, you have to whip up the star of the show: that sun-dried tomato pesto. If you aren’t familiar, sun-dried tomatoes are a dried up roasted tomato with a really intense, concentrated tomato flavor. While they’re usually packaged in oil (my favorite way to buy them), you can also get them fully dehydrated (in which case you would have to rehydrate them yourself before use). Given their strong flavor, sun-dried tomatoes definitely aren’t everyone’s cup of tea. But, as someone who is probably a little too obsessed with tomatoes, I can fully attest to the fact that sun-dried tomato addicts exist! They’re truly delicious — especially when pureed up in a pesto. So, if you’re a fellow sun-dried tomato lover, you have to make this one.

The pesto is super easy. You’ve got your usual pesto players, aka nuts, parmesan, oil, garlic, salt, and pepper. Garlic is key here, so feel free to go overboard if you’re a garlic girl like me. Oh, and, I definitely  have to mention the importance of the olive oil here. I highly recommend using the oil from the jar of sundried tomatoes if you can. It packs in so much more flavor than any other variety of oil, and is totally on brand with this recipe. It really takes this pesto above and beyond. Still, if you are using dehydrated tomatoes, or just don’t have the option to use the oil for some reason, none to fear. This pesto still packs SO much flavor. I’m talking dried rosemary, dried thyme, and red pepper flakes to your liking (which is A LOT if you’re like me). And with just a bit of lemon juice for some acid? Chef’s kiss, let me tell you.

get that cod going…

With that pesto underway, it’s time to get working on that cod. If you have made any of my fish recipes in the past, you probably know that this is my favorite method of making fish. Start with a quick sear to get everything golden and crisp and to start the cooking process. Then, top it with that sun dried tomato pesto and send it to the oven to really bake all of those flavors together. Given the intense flavor of the pesto, there’s no need to add anything else to this fish. Maybe a spritz of lemon at the end would be good?? But it’s not necessary. 

Speaking of that cod, it’s notable that you can use just about any white fish for this Crispy Sun-Dried Tomato Cod Over Lemony Couscous recipe. If you go with a grouper, mahi, or snapper instead of the cod, follow the same timing as written in the recipe. If you use a bass, halibut, or another thicker fish, I recommend about 2 minutes of searing time on each side followed by 8-10 more minutes in the oven. You could even use a salmon, if you would like, in which case the thickness of the fish can vary immensely. Really, just use your best judgement and don’t be afraid to check your fish on the earlier side!

all about that warm salad!!

While that fish is in the oven, it’s time to get going with that warm salad. This is truly the easiest, most dreamy couscous salad out there. I mean, it’s actually more of a cheesy, garlicky grain… but it has some greens so therefore it constitutes a salad in my book (right!??). Anyways, the base of this ~salad~ is some pearled couscous. I like to cook it for about 8 minutes, which typically would be on the underdone, softer side. Really, this just helps keep this salad juicy and delicious without having to add a shit ton of oil. Think of it as a risotto, if you must. 

To that risotto-like couscous, go in with some lemon, a good bit of parmesan cheese, and all the garlic. Then, with a high quality olive oil and just a little s and p, the flavors of this couscous are absolutely decadent. Mix in a good bit of arugula or spinach for some salad bulk and serve it up! Feel free to let those greens wilt to get in all those flavors. It’s delicious either way.

the best weeknight dinner…

This Crispy Sun-Dried Tomato Cod Over Lemony Couscous is truly a family favorite. Crispy, pesto covered fish over a lemony, garlic lcy, and cheesy salad? It always goes fast. Better yet, this dish truly packs everything into one bowl. No need for any side dishes or extra preparations. Really, it’s just the best weeknight dinner to trick everyone into thinking that you’ve been slaving away in the kitchen all day. It’s that good.

Ingredients

  • sun-dried tomato pesto:
  • 1 8.5 oz jar sun-dried tomatoes

  • ⅓ cup olive oil (olive oil from the sun-dried tomato jar is the best!)

  • ⅓ cup walnuts or almonds

  • 5 cloves garlic, smashed

  • ¼ cup parmesan cheese, shredded

  • 3 tbsp water

  • ½ tsp dried rosemary

  • ½ tsp dried thyme

  • ½ a lemon, juiced

  • Red pepper flakes, to taste*

  • Salt and pepper, to taste

  • fish:
  • 2 tbsp olive oil

  • 4 fillets cod (or another white fish), pat dry*

  • pearled couscous salad:
  • 1 cup pearled couscous, prepared according to package

  • 2 cups baby arugula or spinach

  • ¼ cup parmesan cheese, shredded

  • 1 lemon, juiced

  • 2 tbsp olive oil

  • 3 cloves garlic, minced

  • Salt and pepper, to taste

Instructions

  • Preheat the oven to 425 degrees. Boil your pearled couscous according to its package for about 8 minutes. It should be cooked through but on the softer side.
  • In a food processor or low-speed blender, mix all of the sun-dried tomato pesto ingredients.
  • In a large cast iron skillet, heat the 2 tbsp olive oil over medium-high heat. Once hot, add your cod to the oil and sear for 1 minute on each side. Then, remove the skillet from the heat and spoon about ¼ cup of the sun-dried pesto onto each fillet. Transfer the skillet to the oven and bake for another 6-8 minutes, or until cooked through and flaky.
  • Fluff the pearled couscous with a fork, and stir in the remaining salad ingredients while the couscous is still warm. Warm the salad over low heat if necessary while the fish cooks.
  • Serve each piece of the crispy pesto-covered fish over some of the warm couscous salad. Enjoy!

Notes

  • To make this a spicy sun-dried tomato pesto, I recommend using about 1 ½ tsp dried red pepper flakes. It’s delicious with a kick!
