Jump to RecipeBreakfast can get pretty boring — it just can. I mean, there’s only so much oatmeal, eggs, or toast one can consume before it gets boring. Personally, however, I’m not about waking up an extra 30 minutes early to get an exciting breakfast on the table. Rather, I’m a big proponent of meal prepping a breakfast that I can quickly throw together in a bowl — or even simply in some tupperware to take to-go. My other requirements? It’s gotta be packed with protein, and it definitely has to have a variety of flavors and textures to choose from. The goal is to get out of the repetitive breakfast rut, after all. So, in collaboration with my favorite breakfast bars — aka one of the only bars out there using simple ingredients of oats, nuts, honey, and egg whites that ACTUALLY tastes amazing — I created these Granola Labneh Breakfast Bowls 3 Ways!! And, let me tell you, they’re my new favorite breakfast obsession!
The breakdown…
These Granola Labneh Breakfast Bowls 3 Ways are so easy, yet are so fun. I mean, who doesn’t want 3 options instead of 1? The more the merrier, in my opinion. As a base for all the bowls, however, I go in with some creamy labneh. I’m not a big yogurt person, but labneh truly has my heart. Labneh is a thicker type of yogurt that has been strained many times to remove most of its whey. It’s often found in Middle Eastern and Mediterranean cuisines, even as a dip sometimes. Personally, though, I love to eat it in place of Greek Yogurt. A little tangy and with a MUCH better consistency: it’s the perfect protein-and-probiotic-packed way to start the day. Buy it (like I do) at Whole Foods or another grocery, or make it yourself. Either way, it’s the absolute best. Still, you could substitute it for Greek yogurt or do 50/50 if that’s more your thing. The toppings are the fun part, anyways!

Speaking of which, let’s get into the varieties of these Granola Labneh Breakfast Bowls 3 Ways. First up, I whipped up a PB&J bowl. I mean, how could I not?! Peanut butter is arguably one of the best foods out there. Instead of going with a store bought jam, this recipe goes with some simple jam-ified strawberries over the stove. Blueberries, blackberries, cherries, or raspberries would also work with this. Really, all berries are fair game. Simply mix them up with some water to move things along and honey for a bit of sweetness and let it simmer on the stove for a hot sec. After a few minutes and a pinch of salt, voila! Your jam is ready to top off that labneh. Hit your bowls with some of your favorite peanut butter and of course a cubed up Peanut Butter Over Easy bar and your first of the Granola Labneh Breakfast Bowls 3 Ways is good to go!

Next up, let’s talk about the Banana Nut bowls. These are also so so easy. I mean, all there is to these is some simple caramelized bananas. If you’ve never hit your bananas into some hot oil, ghee, or butter on the stove before, you’re missing out. Golden brown, super sweet, and oh-so gooey: they are simply one of the best ways to enjoy fruit. Seriously tastes like a flambé dessert situation… but a bit healthier! They’re the best. Then, go in with some walnuts for a crunch, the most flavorful Banana Nut Over Easy Bar, and a drizzle of honey for some extra sweetness. The crunchy texture and sweet flavor both go so well with the tangy smooth Labneh. Oh, and to finish everything off? Go in with a pinch of flaky sea salt. Maldon is the best… like it seriously takes this dish over the top!!

Lastly, if those apple cinnamon oatmeal flavors are more your thing, you HAVE to try the Apple Cinnamon Labneh Bowls. All this one takes is half a batch of my Spiced Breakfast Apples and a bit of crunch. The apples have always seriously been my go-to oatmeal topping to keep in the fridge, but I am now fully converted to throwing them on some Labneh. It’s the perfect lil way to eat those fall flavors in the springtime! Finish it all off with some of the toasty pepitas (a staple in my house) and of course your Apple Cinnamon Over Easy bites and voila! Your bowl is ready to go!
how to serve them up…
I love making these Granola Labneh Breakfast Bowls 3 Ways ahead of time and popping them in the fridge in some Tupperware containers. They make for the best meal prep! Still, these bowls are the absolute perfect breakfast to whip up when you’re feeling like making a boujee lil spread without all the hassle. With three different flavor combos, they are truly perfect for any occasion! You could even branch out into other toppings/flavor combos! The world is your oyster with these. Whatever you do, though, definitely don’t skip out on the Over Easy Bars. They are truly the only protein-packed granola bar you will ever need — or will ever want, for that matter!!

Granola Labneh Breakfast Bowls 3 Ways

Ingredients
- base:
16 oz labneh, divided*
- PB&J:
1 Peanut Butter Over Easy bar, cubed
2 cups fresh strawberries, thinly sliced
⅓ cup water
2 tbsp honey
A pinch of salt, to taste
optional: 2 tbsp chia seeds
2 tbsp peanut butter, to drizzle
- Banana Nut:
1 Banana Nut Over Easy bar, cubed
1 tbsp coconut oil (or another neutral oil)
2 bananas, thinly sliced
2-3 tbsp walnuts, roughly chopped
A drizzle of honey, to taste
Flaky sea salt, to taste
- Apple Cinnamon:
1 Apple Cinnamon Over Easy bar, cubed
½ recipe Spiced Breakfast Apples
2 tbsp pepitas, toasted
A drizzle of honey or maple syrup, to taste
Instructions
- PB&J:
- In a small saucepan, heat the strawberries, water, honey, and salt over high heat. Bring the liquids to a boil and cook for 4-5 minutes, slightly breaking up the strawberries with a spoon as you go. Then, reduce the heat to medium and cook for an additional 4-5 minutes, or until strawberries are jammy. Mix in the chia seeds for the final few minutes of cooking, if using. Add a scoop of labneh to your bowl, then top with some of the strawberries, a drizzle of pb, and the cubed granola bar. Serve and enjoy!
- Banana Nut:
- In a small skillet, heat the coconut oil over medium heat. Once hot, add your coined bananas to the oil and sear for about 2 minutes on each side, or until golden brown and caramelized. Add a scoop of labneh to your bowl, then top with some of the caramelized bananas, some walnuts, the cubed granola bar, a drizzle of honey, and a pinch of flaky sea salt. Serve and enjoy!
- Apple Cinnamon:
- Prepare the Spiced Breakfast Apples recipe according to instructions. Add a scoop of labneh to your bowl, then top with some of the prepared apples, the pepitas, the granola bar cubes, and a drizzle of honey or maple syrup. Serve and enjoy!
Notes
- If you can’t find Labneh at the store, Greek Yogurt will also work.
