Traditionally, Tabbouleh is a vegetarian Levantine salad made with bulgur, and is typically served mezze style. If you know me at all, you know that Middle Eastern flavors have my heart, especially Tabbouleh. I used to get it on the side of Chicken Shawarma all the time when I ordered dinner. But, in all honesty, I really never loved the bulgur. It’s quite a coarse grain, and often gets stuck in my teeth. Quinoa is far superior in my opinion. So, I knew I just had to make my own version.

For me, the ideal tabbouleh consisted of quinoa (duh), all the parsley (traditional), a revamped dressing (instead of just lemon juice), and of course avocado (because avocado cures all the world’s problems, right?!). I also opted for cherry tomatoes instead of the traditional roma, mostly because that’s what I usually have on hand. Also, when quartered, they are much sturdier than the typical tomato, and result in a less mushy salad. In the end, my Quick Avocado Quinoa Tabbouleh Salad was born, and I can’t eat Tabbouleh any other way!


This Quick Avocado Quinoa Tabbouleh Salad is the best of both worlds. It makes an amazing side salad to my Greek Chicken Burgers, Chicken Souvlaki Skewers, or my Lemon Parsley Steamed Salmon. It also makes for a wonderful, hearty main course. The salad can be left vegetarian or topped with a protein of choice (think chicken, shrimp, salmon, or lamb). Personally, I think this Quick Avocado Quinoa Tabbouleh Salad is amazing for meal prep. Simply toss all of the ingredients and make the dressing, then combine before you eat. Such a healthy and tasty to-go lunch!

Quick Avocado Quinoa Tabbouleh Salad

Ingredients

  • 3 tbsp lemon juice

  • 2 garlic cloves, minced

  • 2 tbsp red wine vinegar

  • 3 tbsp olive oil

  • 1 tbsp honey

  • ½ cup dried quinoa, prepared according to package

  • 2 cups flat leaf parsley, chopped (1-2 bunches)

  • ½ cup fresh mint, chopped

  • 1 pint cherry tomatoes, quartered

  • 4 full chives or scallions, chopped

  • 1-2 avocados, diced

  • Salt and pepper, to taste

  • Red pepper flakes, to taste

  • Romaine heart, optional for serving

  • Hummus, optional for serving

Instructions

  • Whisk lemon juice, garlic, red wine vinegar, olive oil, and honey in a small bowl. Set aside.
  • Gently combine quinoa, parsley, mint, cherry tomatoes, chives or scallions, and avocado in a large bowl.
  • Toss with dressing. Season with salt, pepper, and red pepper flakes. Serve in romaine hearts with a drizzle of hummus, if desired.
