When I first read about the mashed cauliflower trend, I was honestly very skeptical. Then, when I came up with my Balsamic Chicken with Mushrooms and Onions recipe, I knew a Creamy Parmesan Mashed Cauliflower would be the perfect base. It’s lighter than a mashed potato, yet still a rich and creamy base that can scoop up all those yummy juices! I originally went out on a search for the perfect recipe, but kept coming up with clumpy, dry, and flavorless results. Nobody wants that. After a LOT of playing around in the kitchen, I finally came up with a result that meets my perfectionist standards.

The key is the yogurt and parmesan combo; do not skip it!! The yogurt adds a smoothness to the Creamy Parmesan Mashed Cauliflower that is unmatched, and the Parmesan adds the perfect little zing of flavor. And, if you want an extra bite to it, feel free to add 2 tbsp of cream cheese. I rarely have a block of cream cheese on hand, so I left it out of the recipe. But, if you have some in your fridge, it makes for a great addition of flavor! Regardless, it’s so. freaking. good. You honestly won’t even miss potatoes.
My family pretty much requests this every night. Truth be told, I made it last night and my sister is already begging for me to make it again! I served it as a base for my Olive Tapenade Baked Chicken with Arugula Salad, and it was amazing. My sister even said, “if I were to order this at a restaurant, I wouldn’t believe that there are no potatoes in here!” It’s that creamy.
Now, back to those juices. This Creamy Parmesan Mashed Cauliflower is an amazing base for absolutely anything with amazing cooking juices, sauces, or spreads. As I said, I love it with my Balsamic Chicken with Caramelized Mushrooms and Onions, but it’s also amazing with my Seared Salmon with Smashed Peas, Herbed Fish with White Beans, Tomatoes, and Olives or, Olive Tapenade Baked Chicken with Arugula Salad. Alternatively, I make a ton of dishes that go well over rice, couscous, or other grains. After a while, that can get old, so this Creamy Mashed Cauliflower is really a perfect base for any of those dishes. Even better? This Creamy Mashed Cauliflower is amazing by itself. I love it as a simple side for any cozy meal!

Creamy Parmesan Mashed Cauliflower

Ingredients
1 head cauliflower, cut up in florets
4 cloves garlic, smashed
1/3 cup milk
⅓ cup grated Parmesan
3 tbsp Greek yogurt
2 tbsp cream cheese, optional
Salt and pepper, to taste
Instructions
- Steam or boil cauliflower florets and smashed garlic until very tender.
- Place cauliflower and garlic in paper towels, thin kitchen towels, or a cheese cloth and squeeze all of the liquid out.
- In a blender or with an immersion blender, blend cauliflower, garlic, milk, yogurt, Parmesan, cream cheese (if using), and salt and pepper. Heat up in a small saucepan, if necessary. Enjoy!
Notes
- You can use any milk, cream, milk alternative for this recipe. If using a milk alternative, though, make sure it is not sweetened.
