These Chicken Souvlaki Skewers are my everything. As anyone who keeps up with my blog knows, Greek food is the key to my heart. I love everything from dips to fish to gyros! However, I’ve never been a big red meat person (I know… traditional Greek chefs are rolling their eyes). So, when I first tried Chicken Souvlaki Skewers from my favorite little Greek restaurant down the road, I knew I had to recreate my own so I could have an unlimited supply!

This recipe is super special to me. I’ve been testing this recipe for what feels like years because it just needed to be perfect. In my opinion, when you love something from a restaurant so much, you can’t recreate it unless it matches the restaurant quality. Ya know? Luckily, I can honestly say that these Chicken Souvlaki Skewers are even better than any takeout option.

Needless to say, these skewers are no ordinary “kabob” type meat-on-a-stick situation. They’re marinated in a white wine and herb base, but vamped up with Greek yogurt and tons of garlic! And, don’t be afraid to go overboard on the garlic — Garlic and white wine is truly one of the best combinations of all time, especially for a marinade.

The marinade could even work for a traditional lamb, beef, or pork. Go with whatever you love! But seriously, this is the most juicy meat you will ever eat. Even if you burn your chicken to the point of char, the center will remain super moist. The marinade is that good.

If you’re intimidated by skewers: don’t be. All you have to do is soak them while you’re prepping the rest of your meal. Easy peasy. Then, simply string as many chicken pieces you would like on each stick. For my average meal, I usually loop 4-5 pieces on my skewers, but 2-3 works wonderfully for an easy appetizer. For a starter, I recommend mixing and matching the meat with your favorite veggies, then serving with all the dips! 

The last step is to char them up on the grill pan or in a cast iron skillet! Aim for a golden brown crust… it truly elevates the flavors of the marinade. After that, all that’s left is eating! I love to throw them into gyros, dip them in hummus, baba ganoush, or tzatziki, or even top them on a salad or bowl. With a layer of rice pilaf or brown rice, some greens of choice, olives, tomatoes, cucumbers, dips, and the skewers, you have yourself a damn good bowl… plus, it’s super easy for lunch, dinner, or even meal prep! Or, I have even served them for an outdoor dinner party with a bunch of sides. They’re a great alternative or additional to the traditional burgers and dogs. If I haven’t yet convinced you, these are the most versatile dish out there. You’ve got to give these a try. Now, go eat!

Chicken Souvlaki Skewers

Ingredients

  • 10-20 wooden skewers (depending on how many pieces you want per skewer)

  • 2 lb boneless skinless chicken breast, cut into 1-2 in cubes

  • ¼ cup plain greek yogurt

  • 5 garlic cloves, minced

  • 2 tbsp dried oregano

  • 2 fresh rosemary sprigs (or 2 tsp dried rosemary)

  • 1 tsp paprika

  • 1 tsp salt

  • freshly ground black pepper

  • Pinch red pepper flakes

  • 3 bay leaves

  • 1 lemon, juiced

  • 3 tbsp olive oil

  • 3 tbsp water

  • ¼ cup white wine

Instructions

  • Fill a wide bowl with water and soak the wooden skewers for 30-45 minutes to seal the wood.
  • In a large bowl or freezer bag, mix together all of the ingredients except the chicken. Then, toss with the diced chicken to coat. Marinate in the refrigerator for at least 2 hours, or up to overnight.
  • String 3-5 chicken pieces onto each skewer.
  • Heat a greased cast iron skillet or grill pan over medium high heat. Once hot, add the skewers and sear for a total of 7-9 minutes, rotating periodically to ensure that all sides get a good char.
  • Serve with your favorite dip, over salads, in a sandwich, or with a side. Enjoy!
