The easy, bright vinaigrette that’s perfect for any salad! Filled with fresh herbs and citrus, this Cilantro Lime Vinaigrette is a keeper!

Salads are healthy… we all know that. But, they also happen to be one of my favorite foods. I’m not talking boring side salads with rabbit food. I think a salad that hits all the marks has to have a pinch of sweetness, a salty bite, a crunchy factor, and diverse array of textures with the greens/toppings. The best part, though, is definitely the dressing!

Whether it’s simply some tossed greens or a full-on chopped salad, a good dressing is key to success. There’s two directions you can go with a dressing: creamy or a vinaigrette. This Cilantro Lime Vinaigrette is definitely the lighter option, and is perfect with any bright flavors. I like it on a refreshing summer salad, or on a Mexican dish, like my Mexican Corn and Pepita Salad. Still, if you wanted to go with a creamier option, just add half an avocado to the blender and you’re golden.

What makes this Cilantro Lime Vinaigrette so great? Well, for starters, theres a whole lot of cilantro. I find that two whole bunches of cilantro really allows for a full, herbaceous flavor…(It’s also a lot easier to blend in your average blender, which is always good). Second, the combination of limes and half a lemon is SO much better than just plain lime juice. The flavor is less distinctly sour, and more bright and citrusy. With just a few more ingredients, this dressing is heavenly. You have to try it out!

Ingredients

  • 2 small bunches cilantro

  • 2 cloves garlic

  • 2 limes, juiced

  • ½ lemon, juices

  • 2 tsp honey

  • 1 tsp salt

  • ½ tsp cumin

  • ½ cup extra virgin olive oil

  • ¼ cup water

  • optional : ½ a jalapeño pepper (seeds removed), to make it spicy

  • optional: ½ an avocado, to make it creamy

Instructions

  • Blend all ingredients in a high speed blender. It should make about 1 cup of dressing, so use to your taste.

Notes

  • While you could halve the recipe, it is challenging for many blenders to work if you don’t use enough herbs.
  • If you don’t like cilantro, you could replace it with basil or chives, or both. It would have a different flavor, but would still be delicious.
