When I think of summer desserts, I immediately think of peach cobbler. Now, I know the summer treat realm is extensive (so team key lime pie), and grilled peaches seem to be everyone’s biggest obsession right now — and I’m so here for that. I really am. Still, peach cobbler has always aroused memories of baking with my mom in our old kitchen after stopping at the beachside farm stand. It’s forever a nostalgic treat for me. That being said, each year of baking this dessert I run into the same issue: I love the batter heavy aspect of your classic southern cobbler, yet the nutty crustiness of an oat based crisp is seriously addicting. Hence, on a mission to make a recipe that combines these two aspects, this Cinnamon Peach Cobbler Crisp was born. And, let me tell you, it’s truly the best of both worlds.

This Cinnamon Peach Cobbler Crisp is such a foolproof dessert. You’ve got a super simple filling and a topping that’s just as cobbler as it is crisp. That truly all there is to it. To start things off, I like to make the simplest peach filling on the stovetop. I know many peach cobbler recipes call for baking your peach mixture .., and you could totally do this. I mean, it does save dishes. That being said, I love the way combing the peaches, cornstarch, brown sugar, cinnamon, salt, and lemon juice on the stovetop gives you some control over developing that syrupy goodness. Because, with fresh summer juicy peaches and some molassesy brown sugar, the peaches will cook down in just a matter of minutes. The filling is seriously so divine.

Now that you have that classic filling completed, let’s talk about what makes this Cinnamon Peach Cobbler Crisp a bit more unique: the topping. This crust does have a few classic players like flour, sugar, baking powder, and salt. Oh, and extra cinnamon always;)) But, to mix in some “crisp” aspects, I throw some oats directly in with the flour. Sure, you could just use some extra flour, but that takes away some of the “crisp” factor. You could also go on the complete other side of the spectrum and mix some pecans or coconut flakes into the mix. Then, for the final crisp portion, the next step is to work some cold cubed butter into the flour mixture. This helps make the filling a bit more crumbly, as opposed to more cakey.

the topping…

Mix up that crumble mixture with your fingers or a pastry cutter then get on with the wet ingredients! Go in with any type of milk you have (a vanilla milk would even be delicious), and finish things off with some vanilla extract. This will leave the topping batter somewhat crisp-like from the pea-sized butter heavy crumbles, yet still very cobbler-esque from binding everything together with these liquids. Oh, and for some extra cobbler notes? Throw some melted butter onto the bottom of the skillet. It’s just the classic Southern old fashioned way. The result is truly amazing. Layer everything up with some of that batter right on top of the butter, all of those juicy peaches, then a final layer of the crust.

how to serve it up…

I love to finish this Cinnamon Peach Cobbler Crisp off with a sprinkle of more cinnamon (hence the name) and some thick turbinado sugar. You could also go with a bit more granulated sugar, or just leave this step out entirely. If you ditch the sugar, though, I would also ditch the extra cinnamon. Then, pop everything into the oven and wait for all those juices to start bubbling and that crust to get golden brown. Top everything off with your favorite vanilla ice cream and… wow!! This Cinnamon Peach Cobbler Crisp is truly the best bite of the summer. I love to serve this up on just about any average summer night (or whenever I have lots of peaches), but this is also fabulous for a dinner party/entertaining dessert. You could even make this ahead of time, or customize it to be gluten free (see notes). Really, this Cinnamon Peach Cobbler Crisp is just always a good idea.

Can’t decide between a cakey cobbler or a crispy crunchy crisp? This Cinnamon Peach Cobbler Crisp is the ultimate hybrid of the best old fashioned summer dessert.

Ingredients

  • peach filling:
  • 6-7 peaches, peeled and sliced into ¼ inch thick pieces

  • 2 tbsp cornstarch

  • ⅓ cup packed brown sugar

  • 1 tsp cinnamon

  • ¼ tsp salt

  • ½ a small lemon, juiced

  • 3 tbsp water

  • topping:
  • ¾ cup granulated sugar

  • 1 cup flour

  • ½ cup old fashioned oats (or another ⅓ cup flour)

  • 1 ½ tsp baking powder

  • ½ tsp salt

  • 1 tsp cinnamon

  • 6 tbsp unsalted butter, chilled and cubed

  • 3 tbsp unsalted butter, melted

  • 1 tsp vanilla extract

  • ½ cup milk

  • assembly:
  • Turbinado sugar, to sprinkle (optional)

  • Cinnamon, to sprinkle

  • Vanilla ice cream, to serve

Instructions

  • Preheat the oven to 400 degrees. Grease a 9 inch pie pan (or 9×9 inch baking dish) with butter or cooking spray.
  • In a medium saucepan, toss the peaches with the remainder of the filling ingredients. Then, turn the heat to medium-high. Bring to a boil, then reduce the heat to medium-low. Cook the peaches for 6-8 minutes, stirring often. When the peaches have released their juices and have started to cook down with the sugar, remove the pan from the heat.
  • Meanwhile, in a large bowl, whisk the sugar, flour, oats, baking powder, cinnamon, and salt. Using your fingers or a pastry cutter, pinch the chilled cubed butter into the flour mixture until it reaches a pea-sized crumble consistency. Then, mix the milk and vanilla into the mixture until fully combined.
  • Pour the melted butter into the bottom of the greased dish. Spread about ⅓ of the topping mixture around the bottom of the pan (over top of the melted butter). Evenly spread the peach filling over top, then finish with a layer of the remaining ⅔ of the topping.
  • Sprinkle with turbinado sugar (if using) and more cinnamon, and transfer to the oven. Bake for 20-25 minutes, or until the peaches are bubbling and the topping is golden brown. Serve warm with ice cream and enjoy!
