I grew up on Chicken Piccata. Pan-fried chicken, all the butter, and a lemony caper glaze-like sauce: it’s a staple in my household. I mean, we seriously ate this all the time!! While I do love those good nostalgic flavors every once in a while, I have to admit that I think I overdid it on the chicken piccata, as I haven’t really been drawn to it in a few years. So, in thinking about recreating some of my youth fav foods, I knew I had to reinvent this classic into something that I crave today — something that’s a bit lighter, fresher, and packed with a bit of a twist. Hence, these Crispy Grouper Piccata Bites were born… and, let me tell you, I’m totally back on the piccata train!

the breakdown…

These Crispy Grouper Piccata Bites are honestly such an easy weeknight meal. With just a few steps and only one skillet, dinner can come together in no time. To start things off, I get that fish all prepped for a simple sear. As with all things Picatta, you want to get an extra crispy exterior on your fish by dredging it in a bit of flour. Seasoned with salt, pepper, paprika, and oregano, this dredge also acts as a nice outlet for flavor. So, dice up your grouper and run it through just a bit of that flavorful flour before tossing it into your skillet. Some tips? Make sure you shake any excess flour off of your bites after running them through the mixture, then make sure your olive oil is super hot in a really hot skillet (cast iron is best) before tossing them in!

the method…

Give the grouper bites some time on the stove by themselves before tossing in any extra flavors. In doing so, you are allowing the exterior of the grouper to build up a nice crisp before going in with the liquids. You definitely don’t want soft grouper!! Once your grouper is all crisped up and pretty much cooked through, now it is time to mix in all of the picatta sauce ingredients. For this Crispy Grouper Piccata Bites recipe, I opted to go a bit of a lighter route… aka I didn’t use a whole stick of butter. Still, I like to throw in 2 extra tbsp of fat at this stage to really bring things together. Olive oil or butter both work… but don’t skip it! With that, pour in your white wine, capers, and 1 tbsp of the caper brine.

all the flavor…

For the white wine, I wouldn’t recommend going with something super sweet. Besides that, though, most wines will work. And, while you could substitute it for a chicken broth, I really wouldn’t recommend it. The wine brings in so much flavor, and the alcohol will all cook out when you bring it to a boil, I promise. With the good flavors of the white wine, a bit of extra caper flavor from the addition of the caper brine, and the flour-coated grouper, you get the most perfect light yet slightly viscous delicious sauce. Oh, and how could I forget… add in a ton of lemon juice! You want to do this near the end, since acid cooks out easily. Still, it is super vital to the success of a good picatta sauce. With a little help from the extra freshness from the parsley, the brightness of the lemon gives the dish a much needed boost of zing.

how to serve them up…

Top your Crispy Grouper Piccata Bites with some toasted pine nuts and get serving! Personally, my favorite way to serve this is over pearled couscous with some crusty sourdough bread. Still, rice, wilted spinach, linguine, or orzo would all be delicious bases. You could even serve it up with some Creamy Mashed Cauliflower or roasted veggies. Really, you just need something to soak up all that good sauce… because, I mean, it’s freaking delicious! Whether you make this for a quick weeknight dinner, as a main for a dinner party, or even just for a nice family dinner, I promise everyone will love this one!!

Ingredients

  • 1.5 lb grouper, skin removed and diced into 1-2 inch bites

  • 1 tsp salt

  • Freshly ground pepper

  • 2 tsp paprika

  • 2 tsp garlic powder

  • 2 tsp dried oregano

  • ½ cup flour*

  • 2 tbsp olive oil

  • 2 tbsp butter (or an additional 2 tbsp olive oil)

  • ¾ cup white wine

  • cup capers, rinsed and drained (+2 tbsp of the caper brine/juice)

  • 2 large lemons, juiced

  • Fresh parsley or chives, to serve

  • Toasted pine nuts, to serve

  • Rice, pearled couscous, cauliflower, spinach, crusty bread, or orzo, to serve

Instructions

  • In a small bowl, whisk the salt, pepper, paprika, garlic powder, and oregano. Pat the grouper bites dry, then generously coat them with the spice mixture.
  • Pour the flour onto a plate or wide dish. Lightly dredge each piece of the seasoned fish through the flour.
  • In a large skillet, heat the olive oil over medium high heat. Once hot, toss in the grouper bites and sear for 4-5 minutes, flipping halfway through. If your skillet is too small, complete this step in 2 batches then return all of the bites into the skillet.
  • Toss the butter (or extra tbsp olive oil) into the skillet along with the white wine, capers, and caper juice. Bring the liquids to a boil, then reduce the heat to medium low. Simmer for 6-8 minutes, or until the liquids begin to reduce. Stir in the lemon juice.
  • Serve the saucy grouper bites over rice, cauliflower, spinach, crusty bread, orzo, or any other desired preparation. Garnish with fresh parsley and toasted pine nuts. Enjoy!

Notes

  • Any flour works for this recipe. All purpose is my favorite, but you could also use a gluten free substitute.
  • Cod, halibut, flounder, and mahi mahi would all also be delicious alternatives to the grouper. You could even use salmon or chicken, too.
