Greek food is the best. That’s all there is to it. I could eat those fresh flavors every day of my life. I always joke that I’m accidently on the Mediterranean diet, especially in the summer. I’ve actually never been to Greece, but it’s definitely on my bucket list. Before Covid, however, I went on the trip of a lifetime with my family to Italy. We ate our way through the countryside, cities, and coast, and I was blown away with the fresh flavors. Every bite there was truly made from the heart, and were so inspirational for my cooking.

As you would expect, I ate my fair share of bruschetta during my 10 days. It’s the perfect appetizer that my whole family loves, but can also be eaten as a light meal. The only problem with Italian food as a whole was that, by the time I got home, I was so done with those Italian flavors. So, me being me, I obviously had to take a spin on an Italian classic and “Greekify” it!!

Filled with herbs, veg, and a simple marinade, this Greek Style Bruschetta is light, flavorful, and incredibly versatile. In fact, I think it’s flexibility is one of the best parts of the dish. When I’m having people over, I love keeping it as a dip with Homemade Pita Chips or pita bread. If I’m having it for lunch, I love to serve it over bread or as a salad! Depending on your plan, add whatever ingredients you want! Some of my favorites are…

Add ons and substitutions:

  • diced cucumber
  • diced red bell pepper
  • diced avocado 
  • a few tbsp capers, in addition to or instead of olives
  • Fresh dill, in addition to or instead of parsley and mint 
  • Balsamic vinegar, instead of red wine vinegar
  • Castelvetrano olives, instead of Kalamata olives

Fresh and full of Greek flavors, I could eat this Greek Style Bruschetta everyday!!

Ingredients

  • 4-5 Roma tomatoes, finely diced

  • 1/2 cup kalamata olives, diced

  • 1/3 cup feta, cubed or crumbled

  • 1/4 cup mint, chopped

  • 1/4 cup parsley, chopped

  • 1 tsp dried oregano

  • 3 garlic cloves, minced

  • 1 tbsp olive oil

  • 1 tbsp red wine vinegar

  • Salt and pepper, to taste

  • 1 loaf hearty French bread, pita bread, or pita chips*

Instructions

  • Combine all ingredients in a bowl. The longer you sit, the deeper the flavors will develop.
  • Serve over toasted French bread slices, or as a dip with pita bread or pita chips.

Notes

  • My favorite way to eat this is as a dip with homemade pita chips. To make them, I start by heating the oven to 350 degrees. I rub/spray cut up pita pockets with olive oil, season them with garlic powder and salt, and toast them in the oven for 8-10 minutes (flipping half way). Super easy and so good!
