College football season may be over, but I’m still thinking about all the game day foods. To me, that can range from Mexican food, to burgers, and even to chicken nuggets. There’s seriously nothing off limits when it comes to game day munchies… well, maybe except a salad or something. Oh, and you definitely can’t go wrong with any type of dip. Personally, one of my favorites is a classic jalapeno popper dip. Tangy from the cream cheese, a bit of a sharp bite from the cheddar, and super spicy from the jalapenos… it’s the best. Still, a girl can really only eat so much dip. Hence, I sought out to turn this classic game-day munchie into something that’s just as poppable as it is satisfying… something I can really devour for dinner or an appetizer, ya know? And, let me just say, these Healthier Crispy Chiles Chicken Roll Ups are truly a work of art. Game day or not, you have to make this one.

the breakdown…

Given the toothpicks, rolling, etc., these Healthier Crispy Chiles Chicken Roll Ups may seem a bit intimidating. Really, though, I’ve found them to be quite simple. With just a few steps, these are truly one of those dishes that trick everyone into thinking you’ve been slaving in the kitchen all day. To start off this dish, go ahead and line your baking sheet with a greased wire baking rack. If you don’t have one of these, you could totally still make this dish without it. Just note that you may have to flip your chicken mid cook, as the baking rack is really helpful for getting that heat evenly distributed around your chicken.

super simple…

Now, it’s notable that this Healthier Crispy Chiles Chicken Roll Ups recipe doesn’t call for a chicken marinade. That’s really in the name of making this as quick and simple as possible. Still, if you want an extra juicy chicken, you could definitely marinate the chicken in some of the green chiles juice, olive oil, garlic, salt, and pepper. It would be delicious, but isn’t necessary given that cheesy dredging situation.

The next step is to make that jalapeño popper inspired cheese mixture. You can think of it as the eggs, or binding agent, in a classic breaded chicken. Really, though, this mixture packs in so much more flavor. In fact, I go with canned green chiles instead of jalapeños (like in your classic jalapeño popper dip) so that the chicken is t more on the tangy side, as opposed to being super spicy. I mean, you could definitely buy hot and spicy green chiles, but I don’t usually go that route. The mild green chiles makes these Healthier Crispy Chiles Chicken Roll Ups a bit more family friendly, and really something everyone (including non-spicy lovers) can love at a game-day party. Plus, the flavor isn’t overwhelmed by a ton of spicy chiles or jalapeños — It’s just super flavorful.

With those cans of chiles, go ahead and toss in some cream cheese and greek yogurt. Cream cheese is vital to any jalapeño popper dip — or really any game-day dip, for that matter. You just have to have that creamy tangy taste in the mix. Still, given that this is a “healthier” recipe, I only use about 3 tbsp of cream cheese. And, in all honesty, that’s really all you need to get the flavor through. Then, instead of stirring in sour cream or another heavier alternative, I go in with just a bit of greek yogurt to bulk up that base. 

Lastly, you should mix in some garlic, green onions, cheddar cheese, parmesan if you would like, Worcestershire, salt, and pepper. The garlic and green onions bring in a nice cruciferous bite that totally shines through, but those green onions also bring in a crunchy texture that breaks everything up. Then, with that freshly grated cheddar and Worcestershire, this mixture really comes together. I mean, cheddar cheese melted inside chicken with a ton of good spicy tangy flavors? It doesn’t get much better.

the process…

Mix all that goodness up and you’re almost there! Simply dredge each chicken tender (aka thinly sliced chicken breasts) through that cheesy goodness then a bit of a spiced panko. I like to use a gluten free panko to make this a bit lighter, but breadcrumbs, regular panko, or flour would also work. Then, roll up each piece of chicken super tight and layer it onto that wired baking rack. Once each piece is super tightly rolled up, go ahead and stick 1-2 toothpicks through the chicken to hold everything together. You could also go in with a bigger skewer or something, but I don’t think it’s necessary.

Alternatively, you could use 4 full sized chicken breasts and pound them to be about 1/2 inch thin. This is a great option if you are serving your chicken as a main course, as you can stuff a good amount of the green chiles mixture into each breast. Just note that these will take longer to cook through.

how to serve it up

So, with that super crispy, cream cheese green chiles loaded chicken all ready to go, it’s time to send it to the oven. After just 24-28 minutes, your chicken should be cooked through, golden, and ready to devour. While a hot sauce or barbecue sauce would also be delicious with these, I love to make a quick avocado sauce with some of that remaining green chiles mixture. This really helps the flavors shine through… it’s truly so good. Oh, and for sides? I recommend a simple roasted vegetable, the Best Brussels Sprouts You Will Ever Eat, Creamy Parmesan Mashed CauliflowerSupergreen Black Bean Salad, my Super Simple Mexican Corn Dip, Spanish rice, or even some simply dressed greens. You could even serve these up with chips and dip and any of my other game day go-tos.

Ingredients

  • chicken:
  • 1.5 lb chicken tenders*

  • Olive oil or olive oil spray, as needed

  • Toothpicks, as needed

  • green chiles filling:
  • 3 tbsp cream cheese, softened

  • ⅓ cup plain greek yogurt

  • 8 oz chopped green chiles

  • 4 cloves garlic, minced

  • 3 green onions, finely diced

  • ¼ cup cheddar cheese, grated

  • 2 tbsp parmesan cheese, grated (optional)

  • 1 tbsp Worcestershire sauce

  • Salt and pepper, to taste

  • Red pepper flakes, to taste

  • crispy batter:
  • 1 ½ cups panko breadcrumbs

  • 2 tsp garlic powder

  • 2 tsp chili powder

  • 2 tsp ground coriander

  • 1 tsp salt

  • assembly:
  • 2 avocados

  • ½ a lemon, juiced

Instructions

  • Preheat the oven to 425 degrees. Line a large baking sheet with parchment paper and a greased wire baking rack (if you have one).
  • In a small bowl, whisk all of the green chiles filling ingredients together until combined. Set 1 cup of the mixture aside for later.
  • In a medium bowl, whisk the panko, garlic powder, chili powder, coriander, and salt.
  • Dip each rolled up piece of chicken through the remaining green chiles cheese mixture, and then through the panko mixture. Roll up into a tight spiral and line up on the wire baking rack seem side down. Secure with 1-2 toothpicks.
  • Spray or drizzle each piece of chicken with olive oil, then transfer the baking sheet to the oven. Bake for 24-28 minutes, or until the chicken is cooked through and crisp.
  • In a food processor, whip the 1 cup of the green chiles cheese mixture with the avocados and lemon juice until smooth.
  • Serve each chicken spiral with some of the avocado chiles sauce and enjoy!

Notes

  • To make this gluten free, you can use any Panko alternative you would like. Regular breadcrumbs would also work.
  • You could also use full chicken breast and pound them to be about 1/2 inch thick and sliced into approximately 1 x 4 inch pieces.
