This Herbed Tomato Turkey Soup with Lemony Greens is the best of both worlds. With the ground turkey, warming spices, and tomato base, this soup is the perfect hearty and cozy meal. Still, for those late winter nights when you just can’t quite make another chili, this soup has all the vegetables, greens, and a thinner base than its heavy counterpart. Perfect for an easy dinner for tonight:)

Soups are my favorite – you know that. That being said, I somewhat consider myself a “soup snob,” if that’s a thing. So, what do I think constitutes a good soup? Well, it’s really quite simple: a good soup must have a killer broth. And, let me tell you, this Herbed Tomato Turkey Soup with Lemony Greens does not miss the mark. The broth is EVERYTHING!

The breakdown…

The broth starts off quite simply: with a little onion, carrots, and ground turkey sauteed in a tiny bit of olive oil. Ground turkey is inherently a lean meat. Still, there can be darker (fattier) varieties than others. When I’m using a darker turkey, I usually cut down on the olive oil; whereas, when I’m using a lighter turkey or a ground chicken, I opt for more olive oil. Alternatively, you could go in with all the oil, then drain your meat before adding your spices, if desired. Personally, though, I like to keep all of the turkey juices as it makes for a much more flavorful broth.

Once you have your simple sauté going, that’s where the real flavor is added: The cumin, ground mustard, dried tarragon, dried rosemary, dried oregano, bay leaves, salt, pepper, and red pepper flakes. While it may seem like a lot of spices, I’m guessing you already have many of these on hand. And, honestly, a good soup needs all the flavor! With all of these spices toasting up from the beginning, they really have a chance to sink into the veggies and meat. It’s at this step, in the beginning, where the flavor of the broth is determined. After all of the liquids have been added, it’s very difficult to change the flavor profile of the soup. So, give your veggies or turkey a try (once cooked, of course!), and adjust to your liking!

Next up, you’ve got to add all the garlic and the tomato paste. Garlic is garlic… it makes everything better – especially soup. Feel free to even add more than the 3 cloves called for in this Herbed Tomato Turkey Soup with Lemony Greens, if you’re a garlic phenom like me. Pro tip: invest in a garlic press that doesn’t require peeling the garlic – it’s a game-changer.

With the garlic, though, you add something a little more unique: tomato paste. Given that this isn’t a chili or your typical tomato soup, you may be a little skeptical of this step. But, trust me, by sauteing your veggies and turkey with the tomato paste, your traditional broth-based soup is turned into a cozy, yet light, fiery tomato broth. Absolutely amazing. 

Then, toss in your chicken stock, diced tomatoes, and cannellini beans (or any white beans). This really is the substance of your Herbed Tomato Turkey Soup with Lemony Greens. I love using diced tomatoes in this soup. There’s something about them that’s not too much of a puree, or what I consider “tomato-soupy,” yet it’s still a little more substantial and different than your typical broth based soup. Then, with the flavor from the parmesan rind and lemon juice, and the bite from the greens, you have yourself what I consider to be one of the best soups I’ve ever eaten.

I love topping this soup with a generous amount of fresh herbs. This Herbed Tomato Turkey Soup with Lemony Greens recipe calls for parsley and basil, but you could also mix in dill, mint, or chives. Honestly, use whatever mixture you love…. All fresh herbs are welcome here! Oh, and, feel free to top with some Parmesan cheese (I always do) because, let’s face it, cheese makes everything just a little better;)

Ingredients

  • 1 tbsp olive oil

  • 1 sweet onion, diced

  • 2 carrots, diced

  • 1 lb ground turkey (or ground chicken)

  • 1 tsp cumin

  • ¼ tsp ground mustard

  • ¼ tsp dried tarragon

  • ½ tsp dried rosemary

  • 1 tsp dried oregano

  • 2 bay leaves

  • Salt and pepper, to taste

  • Red pepper flakes, to taste

  • 3 cloves garlic, minced

  • 2 tbsp tomato paste

  • 4 cups chicken stock (1 quart container)

  • 1 28 oz can diced tomatoes

  • 1 15 oz can cannellini beans

  • 1 large parmesan rind

  • 1 bunch mustard greens (or other sturdy greens*), roughly chopped

  • 1 lemon, juiced

  • 1 cup chopped parsley and basil, for topping

Instructions

  • In a large dutch oven or pot, heat the olive oil over medium-high heat. Once hot, add in the onion, carrots, turkey, and spices. Allow the vegetables to soften and the meat to brown, about 5 minutes. Toss in the garlic and the tomato paste, and allow to cook for another 30 seconds to 1 minute, or until the garlic is fragrant.
  • Pour in the chicken stock, diced tomatoes, cannellini beans, and parmesan rind. Bring to a boil, cover with a lid, then reduce the heat to medium-low. Allow to simmer for about 20 minutes.
  • After 20 minutes, remove the parmesan rind and the bay leaves. Stir in the mustard greens and the lemon juice. Allow to cook just until the green wilt, about 3 minutes.
  • Serve with a mixture of the chopped herbs. Enjoy!
