Lettuce wraps are the best. With endless possibilities of fillings, they truly have become one of my go-to meals. Lunch or dinner? Chinese or Jamaican? The sky’s the limit. Even with all these combinations, it’s fair to say that some lettuce wraps are just plain boring. Like, real talk? Nobody wants to eat bland lettuce with some grilled chicken or shrimp… that’s rabbit food. That’s where these Mango Jerk Chicken Lettuce Wraps are a true lifesaver. With layers and layers of spice, a juicy, thick sauce, and tons of fresh toppings to balance out all those flavors: these are honestly the best lettuce wraps you will ever eat. Best part? You can easily whip these up in under 30 minutes. The best weeknight dinner!

The breakdown…

The star of these Mango Jerk Chicken Lettuce Wraps is most definitely the chicken. This recipe starts off with tons of Jerk spices. Jerk chicken originates in the Caribbean, and often includes a good variety of sweet and spicy spices. Paprika and allspice bring a little sweetness to this chicken, while the cayenne brings in the heat. With the addition of garlic powder, dried oregano, cumin, and salt, this spice blend is truly amazing. 

These spices get mixed up with a bit of olive oil and some lime juice to create a thick rub for the chicken. The lime juice brings in a ton of much needed acidity to the chicken, but also acts as a binding agent for all the spices. After saving some of the spice blend for later (a crucial step for your sauce!), generously rub the main spice blend into the chicken. Then, it’s to the stove you go! I like to use my cast iron skillet because it gives a great char to the chicken because of it’s amazing ability to retain heat. Plus, you will end up using your skillet later on in the recipe, and fewer dishes is always a win! Still, if you wanted to fire up your grill or grill pan, go for it! 

that sauce…

After searing and dicing up your chicken, it’s time to build up that sauce. The sauce could not be simpler. With a minimal amount of chicken broth, tomato paste, orange juice, and the leftover spice rub, this “sauce” is really more of a loose paste or glaze. Still, once you toss your chicken back in, it coats the chicken with so much flavor that takes these Mango Jerk Chicken Lettuce Wraps from dry and bland to amazingly juicy and perfectly spiced. So freakin good. 

One you have your chicken is cooked up, it’s time to assemble your lettuce wraps! Butter lettuce is my favorite base for lettuce wraps because of its mild flavor and perfectly foldable shape. That being said, you will probably need to double up on your lettuce so that the wraps are strong enough to hold their shape. You could also opt for romaine hearts if you wanted a bit more crunch. You could also use a tortilla instead if you wanted to make these into Mango Jerk Chicken tacos, but I like the fresh and crunchy aspects of using lettuce for this dish. 

assemble!!

Inside those lettuce bundles, layer in a few scoops of that saucy chicken, then pile on the toppings! First and foremost, the scallions are necessary for a little fresh bite. Then, with some queso fresco, you get the much needed creamy note that counterbalances all of the spice from the chicken. Queso fresco literally just translates to “white cheese,” as it’s really just a white, mild, crumbly cheese. You could easily substitute for cotija or feta cheese crumbles, just note that these would add a bit more of a salty flavor. 

Lastly, and arguably most important to this dish, is the mango. The sweetness of the mango is the perfect balance to all of these Jerk chicken flavors. Although the chicken is not necessarily spicy, it definitely has a kick. So, the brightness from the mango really cools everything down… and is absolutely delicious. Make sure you dice it up very small, though, as you want the pieces to be smaller than the chicken cubes. 

Next up? Get to eating! You will seriously devour these Mango Jerk Chicken Lettuce Wraps. The filling itself is good enough to go with a fork, but the whole combination of flavors together inside a lettuce wrap is on another level! You have to make these.

how to serve them up!

I love serving these up for a light dinner, but they are also delicious for summery lunch. The best thing about lettuce wraps? They are SO easy to serve up! If you want to go ahead and serve them for a crowd, simply have everyone build their own wraps with the toppings of their choice – kind of like a “build your own lettuce wrap” station. So easy, yet so delicious. 

Or, you could serve these up for your average dinner with a side dish. My Healthier Puerto Rican Plantains would be an amazing side. Maybe with my Super Simple Mexican Corn Dip as an appetizer? A simple cilantro lime rice would also be a delicious side option! I also love this recipe for meal prep. Simple keep all of the toppings and the chicken in a separate container than the lettuce, then assemble when you’re ready to eat!

Mango Jerk Chicken Lettuce Wraps

Juicy spiced Jerk chicken with creamy queso fresco, sweet fresh mango, and a ton of crunchy greens: these Mango Jerk Chicken Lettuce Wraps are the best summer recipe!

Ingredients

  • 2 limes, juiced

  • 2 tbsp olive oil, divided

  • 2 tsp paprika

  • 2 tsp garlic powder

  • 2 tsp dried oregano

  • 1-2 tsp cayenne

  • 1 tsp allspice

  • ½ tsp cumin

  • ½ tsp salt

  • 2 boneless skinless chicken breasts, sliced in half lengthwise or pounded*

  • ¾ cup chicken broth

  • 2 tbsp tomato paste

  • 2 tbsp orange juice*

  • 3 scallions, sliced

  • 1 cup mango, finely diced (about 2 mangoes)

  • ¼ cup queso fresco, crumbled

  • 1 head butter lettuce

Instructions

  • In a large bowl, whisk together the lime juice, 1 olive oil, and all of the spices. Reserve 2 tsp of the mixture for later. Then, toss with the chicken breasts.
  • Heat the remaining 1 tbsp of olive oil in a large skillet over medium-high heat. Once hot, transfer the chicken to the skillet, making sure to include all of the spice rub. Sear for about 5 minutes on each side, or until the chicken is cooked through.
  • Remove the chicken from the skillet and dice into ½ inch pieces.
  • Reduce the heat under the empty skillet to medium low. Add the chicken broth, tomato paste, orange juice, and reserved 2 tsp of the spice rub to the skillet, and whisk together until a loose paste/sauce has formed. Then, toss the chicken cubes back with the sauce, and cook for another 1-2 minutes over medium-low heat.
  • To assemble your lettuce wraps, layer some of the saucy chicken, scallions, mango, and queso fresco into two pieces of butter lettuce. Serve warm and enjoy!

Notes

  • Pomegranate seeds are also a delicious addition to this recipe. I would top each lettuce wrap with about 1 tbsp. 
  • Another great addition to this recipe would be some diced avocado!
  • You could also use chicken thighs, but this recipe calls for chicken breasts sliced in half lengthwise to make them thinner. You could also pound your chicken breasts to make them thinner.
  • If you are not a big fan of spice, you could also ass 1-2 tsp of honey to your chicken rub.
  • Mango juice and pineapple juice are also great substitutes for orange juice.
