I’ve never been majorly into meal prep because I always find myself wanting to make something else later in the week… lol. But, with all the at-home lunches that came with Covid, my whole family has definitely appreciated having something ready to eat in the fridge! For me, the ideal lunch consists of some vegetables, some protein, and some carbs. Hence, this Super Green Quinoa Salad is the perfect weekday lunch in my book. Filled with nutritious vegetables, like peas, cucumbers, scallions, and avocados, but also protein filled quinoa, this salad hits all the marks!

Still, it’s not some boring bowl of veggies and grains. The crisp refreshing cucumbers, sweet peas, spicy scallions, and smooth avocados make for a dreamy bite. Plus, the dressing totally finishes it off. A simple combination of a red wine vinaigrette and herbs, this dressing could legit be eaten with a spoon. Better yet, it could top almost any salad or grain bowl, and can be used with any herbs you prefer. For this Super Green Quinoa Salad, I like to use mint and basil. However, you could totally use chives or parsley. The possibilities are endless! 

You can even customize the actual salad! To keep it on brand, I like to stick with green toppings, but you could totally switch it up. My favorite way to serve it? I put a few scoops of this Super Green Quinoa Salad over some mixed greens and top it with a Chicken Souvlaki Skewer. The perfect lunch. Or, I love to eat it plain as a side dish… so good!

Ingredients

  • dressing:
  • ¼ cup olive oil

  • ¼ red wine vinegar

  • 2 tsp honey

  • 2 tsp Dijon mustard

  • 2 cloves garlic, minced

  • 1 tsp dried oregano

  • Red pepper flakes, to taste

  • ¼ cup fresh mint, finely chopped

  • ¼ cup fresh basil, finely chopped

  • Salt and pepper, to taste

  • assembly:
  • 1 cup quinoa, prepared according to package

  • 1 cup peas

  • 1 cup diced persian cucumbers

  • 4 scallions, sliced

  • ¼ cup feta cheese, optional

  • 2 avocados, diced

Instructions

  • To make the dressing, whisk all ingredients in a medium bowl. Alternatively, you could blend them in a high speed blender.
  • Toss quinoa, peas, cucumbers, and scallions with the dressing. Top with avocados (so they do not get mushy). Enjoy!

Notes

  • Other great additions to the salad would be sun dried tomatoes, arugula, or chives. You could also add grated parmesan cheese to the dressing (instead of feta, for a bit of a different flavor).
