Jump to RecipeMy mom’s birthday was this week, so I knew I just had to make her a dreamy meal for a pre-celebration feast. Funny enough, though, some of her favorite things I make are truly my simplest recipes, aka my Very Best Avocado Tahini Caesar and my Fiesta Corn Cheddar Chicken Burgers with Avocado Sauce. Clearly the woman likes avocados, I know. So, in honor of her special day, I decided to whip up a recipe that combined these two favs. Moreover, I decided to make a recipe that could be prepared almost entirely in advance, or made in just a matter of minutes. We had a celebration to get to… no time to slave all day in the kitchen!! Low and behold, these Tahini Chicken Caesar Salad Burgers were born. And, to my success, they may be her new favorite OAM recipe:))

These Tahini Chicken Caesar Salad Burgers are really one of the quickest meals to prepare. With just a juicy chicken burger patty, a simple dressing, and a few assembling ingredients/toppings, this one is perfect for those busy weeknights. To start things off, I like to get that Tahini Caesar Dressing all squared away. It’s truly the easiest, most delicious healthy spin on your classic caesar. No egg yolks or mayo here, pls. Instead fill up that goodness with SO much flavor and go in with some Greek Yogurt and tahini until you get the perfect consitency to spread on your buns. to achieve the perfect confinement-like consistency. I love to make a big batch of this dressing and keep it in my fridge all week long. It lasts wonderfully and is truly so delicious on everything!!
With that spread all ready to go, now it’s time to make the second part of this Tahini Chicken Caesar Salad Burgers recipe: the burgers. Now, don’t be alarmed when you hear the words “chicken burger” … I swear these aren’t dry!! Like, seriously, with some egg, Dijon, and Worcestershire in there, you get the perfect bit of moisture without having things falling apart. Oh, and I should point out that those flavors are basically what you would throw into a classic Caesar dressing, so everything ties together seamlessly. Lastly, with some paprika, salt, and garlic powder, the flavor is really taken over the top. I mean, nobody wants plain ground chicken!!
the method…
Mix up all that goodness then get cooking. I love to cook all of my burgers with lower fat contents over the stove. While your classic beef patty may hold up well over a wood fired grill, a chicken burger may fall apart. Plus, a little bit of olive oil in a super hot cast iron skillet gives the patties a GAME-CHANGING char. I mean, in all honesty, the crispy bits that form on the outside of the burgers *may* be my favorite part of the whole thing. They’re to die for. Still, you don’t want to char up those burgers to the point of overcooking them inside. Moisture is key, people!! So, I opt to cook things on a higher heat on one side, then reduce the heat to finish cooking things through. Oh, and definitely top things off with a lid if you have one. You want your chicken to reach an internal temperature or 165… no medium rare here!!
how to serve them up…
The only thing left to do for these Tahini Chicken Caesar Salad Burgers is to assemble! Told you this one was easy! Slather some of that caesar dressing onto a toasty ciabatta bun to start things off. You could also use a regular hamburger bun, or even something like a pretzel roll or sourdough bread. Think whatever type of croutons would go in a Caesar! You could even do a lettuce wrap to keep things paleo. Next, layer on some shredded romaine (bonus points if it’s tossed in the dressing), some creamy avocado, and a few anchovies, if that’s your thing. Hit it all with a parmesan-topped chicken patty and some red onions for a fresh bite! Caramelized yellow onions would also be a delicious option. Close everything up with another bun and voila! Dinner is served! Literally drooling just thinking about that bite, tbh. Plus, when you serve these up with some simple Japanese sweet potato fries, everything is seriously a chef’s kiss. Oh, and (not assembled) everything saves so well for a few days to eat as meal prep!! There’s no bad side to this recipe.

Tahini Chicken Caesar Salad Burgers

Ingredients
- burger patties:
1 lb ground chicken (turkey also works)
1 egg
⅓ cup breadcrumbs (gluten free works)
1 tsp paprika
¾ tsp salt
1 tsp garlic powder
1 tbsp worcestershire sauce
1 tbsp dijon mustard
2 tbsp olive oil
- assembly:
1 recipe Tahini Caesar Dressing
⅓ cup thick parmesan cheese slices
5 ciabatta buns, buttered and toasted
1 cup shredded romaine
1 avocado, thinly sliced
½ a red onion, thinly sliced (caramelized onions are also delicious!)
Anchovies, as desired (optional)
Instructions
- Prepare the Tahini Caesar Dressing recipe according to instructions. If it is too runny to spread, add an additional 2-3 tbsp greek yogurt until a condiment-like consistency forms. Set aside for now.
- In a large bowl, mix all of the burger patty ingredients (except the olive oil) until combined. Form into 5-6 patties.
- In a large cast iron skillet, heat the olive oil over medium-high heat. Once hot, place your patties into the hot oil. Sear, uncovered, for 3 minutes on one side, then flip your patties, cover the skillet with a lid, and reduce the heat to medium-low. Cook for an additional 3-4 minutes. Sprinkle the parmesan cheese on the patties for the final minute of cooking to melt. Once the cheese is melty and the burgers reach an internal temperature of 165 degrees, remove them from the skillet.
- Spread a good amount of the tahini dressing onto each ciabatta roll. Layer on some romaine, a burger patty, a few avocado slices, thinly sliced red onions, and a couple anchovies, if desired. Serve and enjoy!
