You guys seem to love my burger recipes… and I mean, I don’t blame you. I would eat my Cranberry Gouda Turkey Burgers with Cranberry Onions, Sweet Potato Pulled Chicken Burgers, Fiesta Corn Cheddar Burgers with Avocado Crema, or any other white meat burger ANY day of the week. And, luckily enough for me, so will my family. Hence, I find myself whipping up some patties on a skillet pretty much on a weekly basis. They’re delicious, what can I say?! Still, at some point, one can only handle so much chicken or turkey. And, in all honesty, I’m not crazy about red meat. So, I did as I always do, and I whipped up this fam fav dinner but with a twist… with salmon!! Yes, salmon burgers. If you’ve never had fish in the form of a crispy, flavorful patty, this Zesty Avocado Cilantro Salmon Burgers recipe is where you should start!

Making salmon patties seems intimidating. It’s not as malleable as ground meat, right? Well, you may have to trust me on this one, but I promise you that these Zesty Avocado Cilantro Salmon Burgers are seriously one of the easiest weeknight dinners. To start things off, I like to get the onion salsa situation going. For these burgers, I keep the toppings pretty simple, yet super delicious. So, by marinating some thinly sliced white onion with a bit of acid, cilantro, oregano, and salt, you get the perfect little “pickled” onion situation… but with a twist. These aren’t your average sweet pickled onions. Rather, they have a bit of a salty, crunchy, and ~zesty~ note to them… aka the most delicious topping for these Zesty Avocado Cilantro Salmon Burgers.

Next up, I get the salmon going. These patties are super simple, and pretty minimal in ingredients. Start off with your favorite salmon (wild caught is always best!), and get it deboned and skinned. I always ask the fish-mongers to do this for me, just because they have the equipment to do so in about 30 seconds. You don’t want to spend 15 minutes trying to debone and deskin their fish. You just don’t. By getting that salmon all good to go before you leave the store, it’s so easy to finely dice it up for your patties. Simply use a sharp knife (global are my favorite) and make slicing motions through your fish. Once it is in the consistency of a nice tartar or finely chopped poke, you’re golden! Really, you just want the salmon to be able to combine with all those other good flavors.

Speaking of which, the remaining burger ingredients I use here are cilantro, panko, egg, chipotle chili powder, oregano, and salt. Nothing crazy, but super flavorful. The fresh cilantro brings some brightness to everything, just as the chipotle chili powder and oregano really emphasize that Mexican-ish zesty flavor. Then, with a bit of panko and egg to bring in some moisture and stability, your burgers will be perfect! Send them to the skillet in some hot oil and get to searing!

The last step to this Zesty Avocado Cilantro Salmon Burgers is to mash up some avocado with a bit of lime juice, salt, and pepper. It’s basically an easier guacamole. That being said, you could totally use your favorite guac, store bought or homemade. Really, you just want to get some of that lime flavor and creamy avo in there somehow. Oh, and you can totally mix in some greek yogurt, if you would like. I love it with my avo mash on a burger (not so much with chips) for a bit of a creamy, fresh note… but you do you! You honestly can’t go wrong with these. Serve them up on a toasted bun, on a lettuce wrap, or even with a fork and knife and dig in! I love to pair these with a side of roasted sweet potatoes or salad for an easy dinner, but they honestly shine by themselves!

Ingredients

  • toppings:
  • 1 white onion, very finely sliced

  • ½ cup fresh cilantro, finely chopped

  • 2 tbsp white wine vinegar

  • 1 tbsp red wine vinegar

  • 2 tsp dried oregano

  • 1 tsp salt

  • 2 avocados

  • 1 lime, juiced

  • Salt and pepper, to taste

  • Toasted brioche buns, to serve

  • salmon burgers:
  • 1.5 lb salmon, skinned and deboned

  • ¼ cup fresh cilantro, finely chopped

  • ½ cup Panko breadcrumbs

  • 2 eggs

  • 1 tsp chipotle chili powder

  • 1 tsp dried oregano

  • 1 tsp salt

Instructions

  • In a medium bowl, toss your thinly sliced onion, cilantro, vinegars, oregano, and salt until combined. Allow to marinate while you prepare the rest of the mixture, or up to overnight in the fridge.
  • Finely dice your salmon until it is almost a tartar consistency (about ¼ inch cubes). In a large bowl, mix the salmon with the remainder of the burger ingredients until combined. Once the mixture is homogeneous and slightly sticky, form 4 patties.
  • In a large skillet, heat 2 tbsp olive oil (or another neutral oil) over medium-high heat. Once hot, add your patties to the hot oil and seat for 4-5 minutes on each side, or until the salmon reaches an internal temperature of 145 degrees.
  • Meanwhile, in a small bowl, mash the avocados with the lime juice, salt, and pepper (optional: mix in ¼ – ½ cup of greek yogurt, if desired).
  • Layer some of the mashed avocado on each toasted bun. Top with one of the crispy, warm salmon burgers and some of the marinated onions. Serve and enjoy!
